There are 74 characters in Super Smash Bros. Ultimate, at least before all of the DLC is released.

The characters have to be unlocked and there are specific paths to unlocking each of them. There is a handy chart circulating on Reddit that shows the unlock path to every character. Here it is below:

In case you're wondering how this works, let me explain.
Say you really wanted to unlock Lil Mac from Mike Tyson's Punch Out. You can find his face on the far left side. He's the fourth one down on the list. The only route to unlock him is through Mario, because the Nintendo icon is at the top of the list.
You'd begin your trek toward unlocking Lil Mac by playing with Mario. Mario unlocks Sonic, who then unlocks Bayonetta, who in turn unlocks Lil Mac. You would essentially follow this pattern to unlock every character in the game.
Some of the characters are listed multiple times on the chart, which means there is more than one path to unlocking them. Some may be wondering if purchasing the Fighter Pass for $29.99 unlocks all of the characters, but it isn't the case.
The Fighter Pass gives you access to all five of the Challenger Packs, which will include a new fighter (the first one is Persona 5's Joker) a new stage associated with the additional character and a new song. The soundtrack already has over 800 songs on it.
SSBU is already on pace toward being one of the highest-rated releases of the year. On Metacritic, the Nintendo Switch exclusive has an aggregate score of a 93. I don't expect that number to drop much as all of the critical reviews trickle in over the next week.
It's officially the biggest smash hit (no pun intended) of the month of December.
